Low Fat, Low Calorie Zucchini Bread

This is my own personal recipe, but you can find the nutrition information and what other people think of it at SparkRecipes.

Ingredients

    5 egg whites
    1 C. sugar
    1 C. Splenda
    1 C. unsweetened applesauce
    1 tsp. vanilla
    3 C. grated zucchini

    1 C. whole wheat flour
    1 C. all purpose flour
    1 tsp. baking soda
    1/2 tsp baking powder
    1 tsp. salt
    2 Tbsp. cinnamon
    1/4 tsp. nutmeg

Directions

Combine eggs, sugar, Splenda, applesauce, and vanilla in bowl. Add zucchini and mix well. Sift together dry ingredients and add a little at a time, mixing together as you go.

Pour into two loaf pans and bake at 325 for an hour or until a knife inserted into the middle of the loaf comes out clean.

Makes 24 slices, 12 slices from each loaf. Freezes well.

Zucchini Parmesan

This was surprisingly good, especially considering I don't like Zucchini. But we have a bunch of it from the CSA and there are only so many loaves of Zucchini Bread one can make. So I gave it a try. And I'll do it again. It was that good.

  1. Preheat the oven to 350 degrees F.
  2. Clean the medium (or large-ish, if you like your squash as I do!) zucchinis well, cut the ends off, and slice them lengthwise into quarters so that you have eight pieces.
  3. Coat the bottom of a baking dish with the olive oil and place the zucchini pieces in the dish.
  4. Sprinkle with the seasoning salt (I sometimes lightly spray the zucchini with pan spray before sprinkling on the seasoning salt), then with the Parmesan cheese.
  5. Place uncovered in the oven and bake for 20 minutes on 350 degrees F.
Can be used as a side dish or as a main dish, as we did. I used Cajun Seasoning instead of seasoned salt and dipped it in ranch. It was yummy!

A place for my recipes

I often find that I want a recipe. I know generally what the recipe is, but don't remember where I have it. Was it from my mom's cookbook? Was it one I found online? Did I print it out, or do I need to search for it again? Did I really like it?

So... My answer is, of course, a new blog to help me categorize and list my recipes. It will build over time as I make and rate the recipes, and I should be able to search by tag.

We'll see how it goes. =D
